To appreciate the importance of Alli-C it is ﬁrst useful to appreciate the historical signiﬁcance of garlic. Of all the plants used in cooking and natural medicine, it must be the best known and most widely used. In 1944 Italian chemist, C.J. Cavallito first isolated an unstable, odorous, sulfur-containing compound with anti-bacterial properties from extracts of fresh garlic. He called the substance Alli-C after the generic name for the plant Allium Sativum.
